I have a 2001 Subaru Outback H6 I just did the timing chains water pump power steering rack and pump and lines and I'm still getting a low oil light when I'm on my brakes. Help?

The oil light works from a pressure sensor by the oil filter housing. Is it plugged in tight? Is the engine full of oil, or no less than 1 qt low? Are you using a quality filter?

On the brakes inertia will carry the oil forward, away from the sump if its low. First check level, then the oil pressure connector. If the oil pressure connector is tight on the sensor, then pull the sensor and see if there is debris or carbon in the orifice of the sensor.
