I've been using the search functions and have been unable to find an answer.
I just bought a 2005 outback 2.5XT I've only had it for a week. Its basically my first Subaru and i am really enjoying it so far, the turbo is a kick in the pants. The tires it came with are going to be good for the summer but I'm going to need new tires next winter. It came with 17" wheels and I need to know if I can use 16" wheels if I find a good deal on some lightly used tires on Craigslist this summer.

Yes, 16" Subaru wheels will fit just fine.

I have my winter tires mounted on a set of tire rack's Sport Edition A7 (16x 7.5) with 225/60R-16 to get the same total tire height. This does make the cornering a little softer with the taller sidewall and I notice the car pitch more in the turns.

Hard the beat the price when you buy rims and tires from them since they do free mounting and balancing. Makes it exceptionally competitive, especially this time of year when the snow tires are usually on sale.
