It appears that Subaru is not listing complete, assembled short blocks for some reason for the 2.5 liters but they are for the 3.0's, the part numbers are difficult...impossible to find, I'm not sure why. Maybe that's part of the confusion.
257 is a turbo. 253 is 2005+. What dealers told you those motors? Technically speaking you can use either of those blocks though....you wouldn't want the turbo unless you're going forced induction. Any EJ25 short block can actually be used if one knows what they're doing, and I've done it before on your exact engine, but that's neither here nor there.
As you're assembling your new motor you would be wise to use the EJ25 TURBO headgaskets. The non turbo headgaskets are prone to failure and the turbo headgaskets are not...all non-turbo EJ25's are prone to leakage even the last year they were used in 2009 or 2010, you can search the forums or google, that's common knowledge.
