I installed an ecoHitch 2" on a 2018 Outback last weekend.
~2hr job, 100% solo. A few parts could be easier with an assistant but not required.

I took a ton of pictures as I'm fairly sure a long distance friend will want me to do his.
Let me know if you have any specific questions about how things come apart.

The only thing I modified regarding the ecohitch directions:
-Kept the foam piece on bumper beam (reinstalled when done).
Saw no reason to discard it as directions state.

-Trimming the bumper cover, I made my cut a little tighter.
They say 5" x 5" x 7"
I changed mine to:
5" x 5" x 6"
As long as you measure 4 times, cut once it's a perfect fit. Leaves me 1/4" clearance on all three sides of the hitch.
