Black floor mats, and black carpet, are everywhere it seems. But what color is dirt? Generally it's tan/brown or red Georgia clay...

Our 2018 Outback Limited w/Tungsten exterior (a "dirty" silver) had black carpet, black floor mats, and the Subaru ivory interior - nice and cool in hot weather areas, but not very practical from a - keeping it clean standpoint.

Most folks are familiar with custom-fit Weather Guard/Weatherbeater floor mats mats. We discovered another premium custom-fit brand 3D MAXpider via Amazon, that we have in several vehicles and like the premium woven (but water and mud proof). Since the dirt in our region is generally a light tan color, we went with tan floor mats rather than black ones that would have matched the carpet in our Outback, reason being - so foot prints wound not show immediately like they do on black rubber floormats.

Full sheepskin seat covers are not as popular today as they were one or two decades ago and are harder to find e.g. Costco doesn't carry them regularly, if at all. We found a "low back" set in "mushroom" (a light tan) that matched our Outback's ivory leather interior from Brookstone the online/mall retailer.

Those are about the same color as my former Wheaten Terrier. He could go months without a bath and be dirty and stinky, but you would never know he was FILTHY besides the oder.
