What kind of car and engine?

Was it due for an oil change anyway?

It is somewhat unlikely just revving the engine would change the oil in any way.

Manual Transmission? Guessing yes?

The smell is probably clutch it can linger for a few days if she really smoked it good.

As for engine racing LOL can't hurt the non turbo 2.5 with a little case of engine reving while sitting still. You might want to start thinking about a counselor if your so sensitive to the wife's vehicle use. LOL

If the engine oil really turned black and burned like that, you have much bigger problems. Further investigation will be needed. Oil pressure light on?

Unless she kept her foot flat on the floor for several minutes (Not seconds) the issues you are having are not related to her misstep. All modern cars have rev limiters, and will not rev high enough to damage the engine.
